Hearty, easy, delish, and packed with good stuff, this chicken soup will soothe your soul and tummy.
Chicken, Lentil, and Rice Soup, makes 6 servings
1 cup dried soup blend of lentil, peas, and rice (this can be found at most grocery stores)
1 1/2 Tbsp extra virgin olive oil
1 cup diced onion
1 cup diced celery
1 cup diced carrot
4 cups chicken broth
Salt
Pepper
Rotisserie chicken, pulled
Directions:
Soak soup lentil mix submerged in water overnight.
Over medium high heat saute onion in olive oil, then add celery and carrot reduce to medium heat and cook for about 7 minutes. Add chicken broth. Season with salt and pepper to taste. Pull chicken off rotisserie and toss in soup (you may only use half the rotisserie.) Reduce heat to simmer and cook for 20-30 minutes.
Serve hot or store any remaining in refrigerator.
